Since 2003 the whole production is biological, both in wine, which come from 12 hectares of vineyards, and in olives coming from 30 hectares of olive groves.
The soil is very rich in mineral salts making the conditions ideal for the vines and to further guarantee the wanted quality the production is reduced to between 7.000 and 8.000 kg. of grapes per hectare.
The production is a Frascati DOC Superiore and several IGT, both red and white. Special is the Bombino white and Racemo red, since they both are made from the red Bombino grapes. The L'Olivella also produce a Passito, a sweet dessert wine.
